The Dusty SPRINGfield (in case you didn't make the connection) is our testament to the best of the season; the ripest of the ripe, the cheesiest of the cheese, the springiest of the spring... To put the cherry on top of the icing or the plum jam on top of the cheese, this box is an all British selection.

Golden cross (120g)

Made by Kevin and Alison Blunt, Golden Cross has the log shape so characteristic of a classic goat's cheese and is rolled in ash before being matured. It has the dense, but melting texture of ice cream meaning it's super satisfying to chomp through, but surprisingly light. Now call us crazy but we think it tastes like brandy butter or rum & raisin ice cream. Spring just wouldn't be spring without goat's milk cheese!!

garlic yarg (120g)

Cornish Yarg has always been a classic, hailing from Cornwall. You know the guy - wrapped in nettles, fresh and creamy? Well Garlic Yarg is its equally pretty sister. Swap out the nettles for foraged, wild garlic leaves (the essence of spring), and the rest of the process (including application of every leaf, by hand!) stays the same. Still six weeks from 'field to finish' but the garlic leaves leave their mark - you're left with a firmer texture, the unmistakable delicate garlic twang, and a fresh earthiness. We think it is especially buttery at this time of the year.

st helena (120g)

Blake Bowden (cheesemaker extraordinaire) at St Jude has developed the divine St Helena, using raw Montbeliarde milk from the herd at Fen Farm. St Helena has an inviting, supple texture so reminiscent of a classic St Nectaire/Tomme. It is unmistakably rich, with milky and nutty sweet vibes that just keep you coming back for more. But, the washed rind, and the raw milk bring another dimension beyond that. It has those farmy, tangy notes that catch your attention, earning respect as well as delectation. Take a Bow-den, Blake (yikes).

Perl las (120g)

Perl Las is a blue that brings its unique character from West Wales, thanks to the craftsmanship of Carwyn Adams and his team. Perl Las is creamy first and foremost, and has that 'melt-in-the-mouth' quality that is such a treat. But, as with any great blue cheese, there is no hiding from it's true identity. You get a hit of sharpness, and then once the rich cheese has melted away into the ether, you are left with a lingering saltiness...it's as if you were standing on the Welsh coast, breathing in the salty air fresh of the sea.

We talk a lot at The Cheese Geek about cheese offering a sense of place, and Perl Las certainly gives us that...what a treat this cheese is.
