The Ultimate has been a true labour of love representing decades of experimenting with cheese and wine pairings, combos that have proved just too good to keep to ourselves!

This year once again we have worked alongside wine experts, oenologists and winemakers to put together a selection of wines that are just as spectacular as previous years, and that create pairings that really sing.

The cheeses are right up there as cheesegeek Hall of Famers. As always, we’ve gone for a British focus, supporting our incredible local cheesemakers. It’s a real showcase of their work - some you may recognise, some you may not. What isn’t in doubt is their quality, more than a match for anything made across the world.

The Classic includes 800g of cheese and 800ml of wine (that's just over a bottle. If you'd like to double up on the wine, opt for the Extra Wine Set.

During checkout, you will be able to select your preferred delivery date. This is great if you're buying as a gift or are organising your cheese in advance. The cheese will be packed in chilled, insulated boxes (that look great!) and will always be prepared on the day it is dispatched. A few other handy pointers:

- We use DHL nationwide and Packfleet within the M25

- Please use the delivery date you have selected as a guide rather than a guarantee.

- Your cheese will arrive in the best condition. It will have been prepared freshly and will not have been with our courier beyond our maximum of 48hrs

- You will receive delivery notifications for when your order is dispatched that mean you can track when it’s in transit

If you aren’t in for your delivery, this won’t matter. Our couriers will leave your cheese in you designated safe place in our climate controlled packaging.

We’re a small business working with an (incredible) perishable product. For advice on delivery or any cheesy questions, get in touch via the live chat or on hello@thecheesegeek.com

The Perfect Pairings

Rutland Red x AOP Bordeaux Blanc 2022

Innovative take on traditional Red Leicester

More

The only pasteurised Red Leicester to be produced in Leicester, this beaut is buttery and flaky and a firm favourite and both cheesegeek and Long Clawson, the cheesemakers. We're not the only ones to think so as Rutland Red has won many an award, we think the finish is reminiscent of a Creme Brulee.

Paired with AOP Bordeaux Blanc 2022...a combo that really opens up the tastebuds. Watch out for hints of passionfruit (that's not a typo).

Back

Double Barrel x AOP Bourgogne 2020

Extra mature Lincolnshire Poacher - tangy, farmy, smooth finish

More

Eating Double Barrel is like watching HD for the first time when you always thought non-HD was absolutely fine. Before you know it, you cannot live without it anymore. If you thought Poacher was eye-opening, Double Barrel is a must try. It gives you everything a great Cheddar should, but on top of that, another layer of deep burnt butter, nutty happiness that just makes you want to curl up in a ball and giggle.

A real cosy, comforting pairing with the Bourgogne...winter in a glass.

Gruyere x AOP Chablis 2021

The first non-Brit to make The Ultimate. Here's why...

More

Officially the best cheese in the world in 2022, this Gruyere offers everything a great Gruyere should. French onion soup, floral sweetness, brothiness and a delicate nuttiness to round it off. Quite magnificent, and a taste profile that almost anyone would die for.

Coupled with the Chablis, this is a standout pairing that gave us a nostalgic toffee apple experience

Back

Perl Wen x AOP Cotes-de-Provence 2020

Unique mix of traditional Caerphilly and Brie.

More

The makers of Perl Wen are actually originally Caerphilly experts, but turned their hand to making some other varieties of cheese - thank goodness because White Pearl is a cracker. Creamy and with a hint of mushroom earthiness, it is counterbalanced by a definite citrus acidic freshness from the centre of the cheese. The two balance each other so nicely, making this as light a Brie style cheese as you will come across.

Married with a Cotes-de-Provence we enjoyed the freshness this pairing brought. Elegant, refined, not too overpowering.

Back

Swift x Crozes-Hermitage 2020

Exclusive to cheesegeek...

More

An aged gouda style cheese, that sits right in-between the sweeter lighter profile of a young gouda, and the more moody, nutty complexity that comes with a more aged cheese. I think it carries the best of both worlds, maintaing a buttery richness alongside a more yeasty earthy profile that always reminds me of jacket potato skins.

Partnered with the Crozes Hermitage, this brought the best out of the cheese - those rich, buttery elements were in full flow.

Back

Quicke's Mature x AOP Saint Emilion Grand Cru 2018

Comforting, mature cheddar with a vivacious, fruity red

More

Quicke's the makers date back to 1540s so they know how to make goooood cheese. Handcrafted using crass-fed cow milk, this well rounded cheddar is typically matured for 12-18 months (hence the name) and brings you a variety of flavours from brothy to buttery to freshly mown grass and baked potato flavours.

Matched to the Saint-Emilion we found a rich, farmy explosion. A classic cheddar and red wine pairing.

Back

Washington x Chili - Valle de Colchagua Carmenere 2019

Softie washed with organic cider - cheesegeek exclusive

More

A testament to British cheesemaking, and a nod to continental cheesemaking, this is a washed rind cheese destined for great things. When slightly younger, the flavours are fresher and crisper, with just a hint of fruitiness. Ripened on, it develops deep, savoury, meaty flavour, a bit like those famous continental pongers like Epoisses. However, the cider wash brings an astonishing fermented fruity funk, balancing the savoury flavours perfectly, all playing out amidst the most tantalising creamy, decadent, luxurious texture. A modern take on history, and a cheese for the ages.

A real boozy pairing with the Washington taking a little edge off the wine. Texture-wise: perfect.

Back

Young Buck x AOP Jurancon 2020

Traditional Stilton style with a sweet wine

More

Young Buck is a Stilton style cheese, made in small quantities using raw milk, a true reflection of historic Stilton-making. But, beyond tradition, a great cheese has to taste fantastic of course, and consistently so. Young Buck is one our absolute favourite blue cheeses because it hits the right notes every time.

Alongside the AOP Jurancon, an Ultimate first for us in pairing with a sweet wine to give real dessert vibes.
