We’re suckers for a seasonal cheese with this semi-hard beauty only being made between February and September and then aged for a minimum of six months. It strikes the perfect balance across the board: firm yet delicately creamy; full yet not overly strong flavour; a mix of savoury and sweet notes. Fudge, caramel, butter are all in play.
