Village Maid make winners. Spenwood is already up there as top 5 Cheese Geek cheeses (yes, it’s like picking your favourite child - we shouldn’t do it but everyone has one), now they have only gone and added a layer of minced Tartuflanghe truffles. Goodness me, we thought Spenwood had peaked. We were wrong.

The classic Spenny is still there - a barnstorming British take on a classic Pecorino. Big, Sheepy, in fact the Pecorino comparison doesn’t quite do it justice - she really evolves over time. At 6mths, it is nutty in a more sweet milky way, so care-free and happy go lucky. As she ages, you start getting a bit more of a toasted caramel style hazelnut nuttiness, and we do start moving further from those Pecorino comparisons. Once we get beyond 9mths, Spenny takes on a different persona entirely. Gone is that fresh-faced, sweet little cheese, and in its place is the slightly moody teen. It brings meaty to the table, savoury saltiness, someone may have described it as roast lamb in the past..sure, we can get on board with that. It also gets harder, drier, and has a definite tang. But now truffled!! Christmas has arrived.

tcg top tip: Try grating on top of pasta or risotto
