For all our talk of being modern, a large part of cheesegeek relies on traditional methods and hand-me-down recipes such as this clothbound cheese. A 300 year old recipe, revived by the Appleby family in 1986, when we taste this double gloucester, we're reminded of warm buttered toast with a tangy fruity finish.
