We think of Westcombe as The Godfather amongst cheddars...nothing mild about it, a real flavour explosion. We get citrus throughout with the odd pop of hazelnut and caramel. It's as traditional as they come with the same recipe being followed for over 100 years - raw milk, clothbound - it's as good as they come. It's known in the trade as the five mile cheddar - usually because you're still tasting it 5 miles down the road. For us, this is usually the point where we're turning round, heading back to Westcombe farm and buying more.
