Method:
Start by coating your wings in salt, pepper, paprika, garlic powder and onion powder, then add a light dusting of baking powder and cornflour - this is your shortcut to that properly crisp, crackly skin. Finish with a quick spritz of olive oil, then air fry at 190°C for around 20 minutes, turning halfway, until golden and irresistibly crunchy (no air fryer? oven: 200°C, 35–40 mins. Still elite).
While that magic’s happening, gently melt the butter and stir in your buffalo sauce with a touch of honey. You’re after that perfect balance of fiery, tangy and just a little bit sticky.
Now for the star: the blue cheese dip. Crumble your blue into a bowl (don’t be shy), then add Greek yogurt, a squeeze of lemon juice, minced garlic, a splash of milk and black pepper. Mix until luxuriously smooth, with just enough texture to remind you it’s the real deal.
Once the wings are done, toss them through the glaze until every nook and cranny is coated. Serve immediately with the blue cheese dip on the side and a scattering of parsley.

100g Yorkshire Blue
170g Greek Yoghurt
