Meet the Maker
In 1979 Helene and Dick Willems decided to start making cheese from milk produced on their small farm in the mountains of Coolea in Co Cork, Ireland. After quick growth and popularity, their son, Dicky, became the main cheesemaker in 1993 and still is to this day.
